Ingredients:
- 4 spatchcocks
- 1 lemon, cut into wedges
- 8 cloves garlic, halved
- 1/3 cup AYAM™ Hoi Sin Sauce
- 1/3 cup AYAM™ Plum Sauce
- 2 tablespoons honey
- 8 small red chillies, finely chopped
Method:
- Preheat oven to 200°C. Fill the cavity of each spatchcock with lemon and garlic. Tie legs together with string.
- Place spatchcocks on a rack, place in a baking dish and pour in enough water to cover the base of the dish to 1cm deep. Cover loosely with foil, bake 30 minutes.
- Combine the hoisin sauce, plum sauce, honey and chillies and brush some over the spatchcocks.
- Return them to the oven and cook, uncovered, 40 minutes or until golden brown and juices run clear when pierced with a knife. Brush occassionally with the sauces during cooking.
