sweet glazed roasted spatchcocks

Serves 4

Preparation Time: 10 minutes
Cooking Time: 1 hour 10 minutes

Ingredients:

  • 4 spatchcocks
  • 1 lemon, cut into wedges
  • 8 cloves garlic, halved
  • 1/3 cup AYAM™ Hoi Sin Sauce
  • 1/3 cup AYAM™ Plum Sauce
  • 2 tablespoons honey
  • 8 small red chillies, finely chopped

 

Method:

  1. Preheat oven to 200°C. Fill the cavity of each spatchcock with lemon and garlic. Tie legs together with string.
  2. Place spatchcocks on a rack, place in a baking dish and pour in enough water to cover the base of the dish to 1cm deep. Cover loosely with foil, bake 30 minutes.
  3. Combine the hoisin sauce, plum sauce, honey and chillies and brush some over the spatchcocks.
  4. Return them to the oven and cook, uncovered, 40 minutes or until golden brown and juices run clear when pierced with a knife. Brush occassionally with the sauces during cooking.
